Apple Pie Mini-Goodness

So today I made little apple pies, because OH has a long week ahead, and I figured a small apple pie would have a lot of crust (OH's favorite part of an apple pie).
They ended up looking kind of like muffins, but hey, OH liked them, and that's why I made them.  Follow the jump for the recipe!

And I learned that even after being in the oven for 45 seconds, a muffin tin can still burn your hand!





1 1/2 cups all-purpose flour
1 tablespoon white sugar
pinch of salt
1/2 cup vegetable oil
2 tablespoons milk

Preheat oven to 350
Mix all ingredients together, and if needed add a bit more flour to get a workable consistency.
Line muffin tin with those paper things.
Roll a small ball of pie crust and then press into the bottom of the tins, working up about halfway the tin, so you get a little cup thing.
I put a spoonful of unsweetened applesauce (you could use whatever fillinfg, I'm assuming) in each cup, and a sprinkle of cinnamon on top of the applesauce.
Cover with a flattened piece of dough, pressing the edges to the bottom bit. Don't forget to cut a small hole in the top crust.
Melt a little bit of butter, mix in some sugar (to your desire) and a bit of cinnamon. Spoon or brush a little bit on top of each pie.
Bake for 15min.

It took about 25 minutes total, and I didn't have to go to the store! (Love that!)

Sorry for a lack of pictures, I was quite worried how they'd turn out! Luckily they turned out great!
